Because she has proven herself to be a really awesome character. Not only is she really sweet, and nice, and generous, but she has proven again and again to be more than meets the eye. People, both in-universe and in fandom seem to think that she’s just some rich daddy’s girl (or worse, suspect that she’s evil for being…what? Too likable?)
She can protect herself. She has deep rooted morals. She chose what was right over her own father, even though it hurt her to turn on him. Her relationship with Mako is sweet, and very genuine. Her generosity, not only in getting her father to fund the Fire Ferrets, but also taking he boys into her home is admirable. Her friendship with the boys, and with Korra is endearing.
I like what she brings to the show- not only as a non-bender, but also as a good contrast and foil to Korra. Asami really shows that there are multiple ways to be a strong, enjoyable, interesting female character. Girlyness is not weakness.
Even before this latest episode, I deeply enjoyed Asami, and episode 7 has only validated all my praise.
